Vegetable Stir Fry

Ingredients

  • 1 Tbsp olive oil

  • 1 red bell pepper (sliced)

  • 1 yellow pepper (sliced)

  • 1 cup spring peas

  • 1 cup carrots (sliced)

  • 1 cup mushrooms (sliced)

  • 2 cups broccoli

  • 1 cup baby corn

  • 1/2 cup water chestnuts

  • 1 cup zucchini

  • 1 tsp ginger (minced)

For the Sauce

  • 3 garlic cloves (minced)

  • 3 Tbsp brown sugar

  • 1 tsp sesame oil

  • 1/2 cup chicken stock (or vegetable stock)

  • 1 Tbsp cornstarch

Garnish

  Chopped green onions and sesame seeds (optional) 

Instructions

  1. In a wok or large skillet add 1 Tbsp olive oil over medium high heat. Add all the veggies and sauté 2-3 minutes until they’re almost tender.

  2. In a small bowl, whisk together all of the sauce ingredients.

  3. Pour over veggies and cook until sauce has thickened. Garnish with chopped green onions and sesame seeds if desired.
