Vegetable Stir Fry
Ingredients
1 Tbsp olive oil
1 red bell pepper (sliced)
1 yellow pepper (sliced)
1 cup spring peas
1 cup carrots (sliced)
1 cup mushrooms (sliced)
2 cups broccoli
1 cup baby corn
1/2 cup water chestnuts
1 cup zucchini
1 tsp ginger (minced)
For the Sauce
3 garlic cloves (minced)
3 Tbsp brown sugar
1 tsp sesame oil
1/2 cup chicken stock (or vegetable stock)
1 Tbsp cornstarch
Garnish
Chopped green onions and sesame seeds (optional)
Instructions
In a wok or large skillet add 1 Tbsp olive oil over medium high heat. Add all the veggies and sauté 2-3 minutes until they’re almost tender.
In a small bowl, whisk together all of the sauce ingredients.
Pour over veggies and cook until sauce has thickened. Garnish with chopped green onions and sesame seeds if desired.
